There’s always a good story behind a healthy cookbook.
Everyone thinks their grandma’s pot roast recipe is the best, or wants to share their mom’s secret chocolate chip cookie recipe. Those are the cookbooks everyone naturally wants to write. But a healthy cookbook? You know there’s a story there.
And there is certainly a story for me. For over two decades, I enjoyed recipes like my mom’s chocolate chip cookie recipe – in extraordinarily large quantities. Starting in my early teens, I began a long struggle with compulsive overeating. And while there was a lot of mental and emotional healing that had to happen in my healing process, the physical part – learning to listen to my body, to understand nutrition, and to organize myself and to make my health a priority in my busy life was a big piece of the puzzle.
And guess what? I figured it out. It wasn’t easy. I dedicated myself to learning about the kinds of food my body really needs, and I studied how to make it fast, efficient, easy and taste good. And of course, once I learned how to do it, I couldn’t just keep it all to myself.
I started the Happy Gal blog in 2013, and within a few months it was apparent that to really help my followers and the women I worked with, they needed what I wished I had always had – a collection of tips and recipes to make healthy eating fast, easy, and delicious. And so in a matter of a month – yes, I think I was given superwoman powers – in one month I wrote and published Healthy Eating the Happy Gal Way.
I am so excited to share this with you, because I have seen the look of overwhelm and discouragement and the plead for help in the eyes of the women I work with in personal coaching. It is HARD to know where to start. And so, in easy language, with plenty of guidance, in this cookbook I lay out an eating plan that stands the test of time. No fads or trends – just good common sense. And then I give you what you really need to get started – over 100 recipes for breakfast, lunch, dinner, snacks, and dessert. And you’ll be happy to know that the criteria for every recipe is the same: it’s got to be fast, healthy, and delicious. After all, we all have lives. We want good food, but we can’t be a slave to preparing it.
