The Happy Gal Dads Favorite Breakfast Made Healthy

Just in time for Father’s Day…protein pancakes. Now, here’s a little tip. You don’t want to call them that. After all, the last thing Dad needs to know is that he is eating healthy on his special day. But trust me, these pancakes are so good that he’ll know they are something special (and that’s all that really matters as far as he is concerned!) As for you, it is your good fortune to have the luxury of both scoring some brownie points with your man, and being able to share his breakfast while still eating healthy. So whip up a batch, and be sure to let me know what you think!
Protein Pancakes

Combine cottage cheese, flour, sugar, salt and cinnamon. In a separate bowl, beat egg whites with cream of tartar until stiff peaks form. Blend all ingredients until smooth. Heat large skillet over medium – medium-high heat and spray with cooking spray. Drop batter onto hot skillet. Cook until golden and set, 2 -4 minutes. Flip pancake and cook 2-4 minutes longer. Serve with fat free cool whip, fresh berries, and a sprinkle of cinnamon. (My husband really likes to substitute the cool whip with syrup. More calories, but I guess it’s his big day!)

*Note: For pancakes with more texture, gently fold the egg whites into the cottage cheese mixture rather than blending.
