Spring is a busy time for my family, and because healthy eating is important to me, I really need to have quick, easy & healthy recipes for a fast and convenient dinner. Rotisserie chicken is one of my best go-to’s. It’s so tender and has such great flavor, and it makes cooking dinner a snap!

This is a fun one because it’s so unique. Though it’s not pictured with chicken, I always pile it on to add some protein. This is a favorite lunch when I have leftover yams from dinner before, but can make a quick and easy dinner as well.

Southwestern Black Bean Salad

This Black Bean Salsa has a lot of options. The less healthy route is to skip the chicken and dig into it with a bag of tortilla chips. I’m not going to say I’ve never done that! But when I’m looking for a healthy meal, I’ll mix in some rotisserie chicken and grab a fork.

Quick Chicken Quesadillas

From Ease and Carrots. Maybe not so healthy, but the kids will eat them! I go light with the cheese and throw in whatever taco toppings I have chopped in the fridge, then top with lots of lettuce and salsa.

From Six Sisters Stuff. This one’s got a lot to offer: crockpot meets rotisserie chicken…it doesn’t get any easier than this! Put the soup on after lunch and then come home to dinner after a busy afternoon. Just add noodles and rotisserie chicken – and dinner is served!

Nothing too creative here, but this picture makes my mouth water every time. I like it fixed this way, but of course my kids aren’t too fond of the green stuff. But hey – chicken wraps are quick and healthy, and easy to customize for the whole family.
