Valentines Day is just over two weeks away! Most people don’t think of Valentines Day as a big food holiday. We save Thanksgiving, Christmas, and even Easter for the big meals. These words remind me of Valentines Day: Pink, red, love, happy, sweet, light.
The other day, I was eating one of my favorite salads (I am not a huge salad eater, but this one is too good to pass up) and I realized that it would be perfect for Valentines Day! It is pink, red, light, sweet, and when you eat it, it will make you happy and you will LOVE it! See what I mean? Perfect fit!
Don’t you just love that pink dressing? So whether you are planning a lunch with friends, or making a Valentines meal for your family, make sure to add this one to the menu plan!
Strawberry Arugula Salad
For the salad:
3/4 c sliced strawberries
5 oz arugula (about 5 cups)
1/2 red onion thinly sliced
2 tbsp toasted* unsalted pumpkin seeds (pepitas)
2 oz goat cheese** crumbled
For the dressing:
1 c chopped strawberries
1/4 c red wine vinegar
1 tbsp safflower oil
1 tbsp raw honey
In a blender, purée 1 cup chopped strawberries, vinegar, oil, and honey until smooth.
In a large bowl, toss arugula, onion, and 3/4 cup sliced strawberries. To serve, add dressing and toss until coated. Top with seeds and cheese.
*To toast the pumpkin seeds, just toss them into a pan with a tiny drizzle of oil over medium heat. Stir them for a minute or two until they are toasted.
**If you are not a fan of goat cheese, feel free to switch it up and try your favorite crumbly cheese instead!
