Low-Fat Pumpkin Waffles

5 egg whites

1 ½ cups whole wheat flour

2 teaspoons baking powder

1 teaspoon baking soda

2 teaspoons cinnamon

¼ teaspoon salt

½ cup skim milk

1 cup canned pumpkin puree (not pie filling)

4 tablespoons honey

2 tablespoons applesauce

1 teaspoon vanilla

Coat a waffle iron with cooking spray and preheat. Place the egg whites in a mixing boal and beat on high until stiff peaks form. Whisk together the flour, baking powder, baking soda, cinnamon, and salt in a medium bowl. Whisk in the soy milk, pumpkin, honey, oil, and vanilla. Gently fold in the egg whites until combined. Place ½ cup of batter on waffle iron. Close and bake until done. Serve with sugar-free syrup and butter spray.

  1. Very yummy recipe! I will definitely recommend to friends! However I was unable to find how many calories one waffle has.

    1. So glad you liked the recipe. You’re right – I don’t provide calorie content because I don’t count calories. I practice intuitive eating, and have learned to listen to my body instead of counting calories. There’s no right or wrong way to eat healthy, this is just what works for me!
